Spiced Applesauce
Yield: 9 cups
Ingredients

medium tart apples, peeled and quartered

apple cider
|

| 3/4 |

sugar
|
|
|

Tablespoons |
lemon juice
|
|
|
| 1 |

cinnamon stick
|
|
|
| 1 |
teaspoon |
ginger
|
|
|
| 1 |
teaspoon |
vanilla
|
|
|
| 1/2 |
teaspoon |
nutmeg
|
|
|
| 1/2 |
teaspoon |
mace
|
|
|
| 1/2 |
teaspoon |
cardamom
|
|
|
Directions:
Place all ingredients in large saucepan. Cover and cook over medium low heat for 40 minutes or until apples are tender. Remove from heat; discard cinnamon stick. Mash the apples to desired consistency. Serve warm or chilled.
